Strawberry Infused Rum

We love cocktail recipes that combine berries and rum – especially strawberries, so we thought we’d try to make a batch of our own strawberry rum to use in some of our favorite strawberry + rum recipes.

The hardest thing about infusing rums is having the patience to let the process work. This one is no different. It takes between 2 weeks and a month to get the desired “strawberryness” so be prepared to wait a while to sample your creation – but, it’s worth it!

Slice about 3 cups of fresh, ripe strawberries and put them in a clean jar that can be tightly sealed. Add enough light rum (we used Bacardi) to cover the strawberries plus about an inch and seal. Store the jar in a cool, dark place and gently shake once a day.

Test your infusion after about 2 weeks and if the taste is not as strong as desired, seal it back up and wait another week. Once happy with your results, use in your favorite strawberry rum cocktail recipes!

Pumpkin Bluff Beach, North Caicos

O.K. we admit it – we are just crazy about beaches. Something about the beautiful blue water and creamy white sand absolutely soothes our souls. We’ve been lucky to have seen some amazing beaches in our travels and this is one of the top on our list.

Getting there:If you don’t like deserted beaches, with miles of undisturbed sugar soft sand, you should probably not read any further. We visited this one, Pumpkin Bluff Beach on North Caicos three times during our stay on the island, never saw another person – and LOVED the solitude…

Pumpkin-Bluff-Beach-copyright Rum Therapy
Pumpkin Bluff was not the easiest beach to find on North Caicos – perhaps the reason it was so isolated. In fact, we never saw a sign leading to Pumpkin Bluff and originally called it Shipwreck Beach because of the freighter shipwrecked
just off the reef. It wasn’t until  we returned home and located the beach on a map that we realized the name was Pumpkin Bluff. Still think we like Shipwreck Beach better!

We’d recommend just getting a good map and exploring until you find it – it’s well worth it. Three Mary Cays on the right in the distance is a great place to snorkel.

Pumpkin-Bluff-Beach copyright Rum Therapy
Pumpkin Bluff has very long expanse of beautiful white, soft sand and the water is shallow and clear for a long way out. The weather was calm and warm while we were in North Caicos and the swimming (and floating) were great!

Calmos Café, St. Martin

Whether you just want to relax on the beach with your toes in the sand while sipping on your favorite beverage or to enjoy some tapas while watching the sun set over the bay, Calmos Cafe has you covered.

Located right on the beach on the French side in Grand Case, St. Martin, Calmos Cafe serves everything from fine wines to tropical rum concoctions and tasty fresh, local food to go with it.

We enjoyed some tapas along with a frozen rum drink called the Calmos (with peach and mango) and a Rhum Runner, all of which were excellent, but even more so as we enjoyed them while sitting just inches from the water while watching the sun set…

The atmosphere is warm and quiet most nights, but if you’re looking for more excitement, plan to visit on the nights they have a live salsa or reggae band.

Their motto: C’est La Vie – That’s life!

We got there early one evening and it was relatively uncrowded, but as the evening wore on, more and more people arrived snapping up all the tables and seats by the shoreline.

And why not. With good food and drinks and a view like this…

So, if you’re looking for a place to enjoy some rum with a view while on St. Martin, Calmos Cafe will serve up that and much, much more.

Rum N’ Root Beer Float

Oh my gosh. We’ve been in love with rum and root beer since our post on Dirty Pirate Poptails. We’ve been wanting to try rum and root beer in a root beer float, and just happened to have the time (and ingredients) to try it out last weekend. Well I’m pleased (and a bit dismayed, ’cause we’ve gained a pound or two while experimenting) to announce that we’ve come up with an amazing, stellar and incredible combination for this very adult version of a Root Beer Float. Hope you enjoy it – just remember, although big on taste, it’s unfortunately not short on calories! (but who’s counting….)

Rum 'N Root Beer Float
Rum N’ Root Beer Float

Vanilla Ice Cream
Root Beer made with cane sugar
(we used Virgil’s Root Beer – Hansen’s Root Beer is also very good)
2 oz. Dark Rum
(we released the Kraken for this one)

Fill a tall glass with several healthy scoops of vanilla ice cream, pour in the dark rum and top off (slowly as it foams up) with the root beer. Kick your feet up and enjoy!!
