Watermelon Rum Freeze

Looking for a cold and refreshing treat for summer? This Watermelon Rum Freeze might just do the trick. Cold, refreshing and fruity – with a punch of rum of course! Make it in large batches and store it in the refrigerator for a cold summer party beverage!

Watermelon Rum Freeze
(makes 9-10 cups)

3 c. ripe seedless watermelon
1.5 liters lemon lime soda (or diet lemon lime)
6 oz. frozen lemonade concentrate
1/2  750 ml. bottle white rum

Slightly blend watermelon on low in a blender (it’s ok if there are small chunks). In a very large bowl, add all ingredients and stir. Pour into gallon sized zip lock bags – I used two for this recipe (hint: clean out the top part of the blender and set on counter. Put a gallon bag on the inside and pour in mix until 1/2 to 3/4 full, then remove bag and close tightly) Put bags in the freezer for 12-24 hours. Spoon into glasses and garnish with watermelon balls and mint.
