Skinny Mojitos

Now that the holidays are over, we’ve been busy testing “Skinny” Rum Drinks – or cocktails with lower calorie counts. We’ve been enjoying Skinny Strawberry Rum & Lemonade for quite some time, but we thought it would be good to have a few in the repertoire to change it up a little.

Skinny Strawberry Mojito and Skinny Mojito

Mojitos seemed a logical choice since we enjoy the heck outta them, so we tried out a Skinny Mojito & a Skinny Strawberry Mojito and really like them both! If you like your mojito on the sweeter side, use the Sprite Zero or Diet 7-Up and adjust your lo-cal sweetener level. Like your mojitos a little less sweet? Use club soda instead of the Sprite Zero or Diet 7-up. Want more rum in your drink? 80 proof rum is 65 calories per ounce, so just adjust per taste (and desired calorie level!)

The recipes below have just about the right amount of sweet and tart for our taste – feel free to modify for your taste. Enjoy!

Skinny Mojito

Skinny Mojito
(makes one)
Calories: 110 per serving

1.5 oz white rum (we used Bacardi)
8 oz. Sprite Zero or Diet 7-up (or club soda)
1/2 tsp. Stevia
14 mint leaves
1/2 lime cut in slices
Lime slice for garnish

Muddle mint leaves, lime and Stevia in a tall glass. Add crushed ice, rum and soda. Stir slightly. Garnish with lime.

Skinny Strawberry Mojito

Skinny Strawberry Mojito
(makes one)
Calories: 90 per serving

1 oz. white rum (we used Bacardi)
4 fresh strawberries cut in slices
8 oz. Sprite Zero or Diet 7-up (or club soda)
10 mint leaves
1/2 lime cut in slices
Strawberries for garnish

Gently muddle strawberries, mint leaves and lime in a tall glass. Add crushed ice, rum and soda. Stir slightly. Garnish with strawberry slices.
