We recently tried this recipe found on the Cockspur Rum website, during our Cockspur Rum Tasting Experience. Smooth and luscious, this would make an excellent after dinner drink for the holidays!

(makes one)

1 – 1/2 oz COCKSPUR Fine Rum
1 – 1/2 oz condensed milk
1 – 1/2 oz cream
1 tablespoon chocolate syrup
3 drops of vanilla essence (we used pure vanilla extract)
freshly grated nutmeg

Shake well with ice and strain into a glass and sprinkle with freshly grated nutmeg.

Candy Cane Infused Rum

Last spring we infused our first batch of Strawberry Rum and loved it, so as the holidays rolled around, we began thinking of infusing rum with a holiday taste, such as Candy Cane.  We tried it out and found it’s easy to put together and if you divided it into small 8 oz. mason jars with lids, would make great little gifts for your rum drinking friends. Just add a ribbon with a candy cane and maybe a recipe and voilà!

Talk about getting into the holiday spirit(s)!

Candy Cane Infused Rum
(makes 2 cups of rum although quantities can easily be increased)

2 cups of white rum (we used Bacardi)
15-20 small candy canes
(we used all 20 and the result was very pepperminty. Use less if you want just a hint of peppermint.)
Glass jar with a lid

Arrange the candy canes on the bottom of the glass jar. Add the rum, then seal the jar with the lid. Gently shake every once in a while. When the candy canes have dissolved, the rum is infused. Ours took only about 12 hours. The finished product is a nice light red color and is good for sipping or could be used in some holiday recipes.

Spooky Rum Punch

Halloween is just around the corner and we seem to get a lot of requests for rum themed Halloween cocktails. We ran across this one recently and set out to give it a try. After a bit of searching, were able to find the black sanding sugar, but if you have trouble finding it, you can easily make your own using this recipe. The black licorice strings were harder to find, and although a black licorice spider looks really cool (and is edible!) we opted for a plastic one that we dangled from a bamboo pick.

Optionally, you can float some dark rum on the top, which sounds cool, but ours just kept blending with the rest of the cocktail, so we ended up just adding 2 oz. of gold rum and foregoing the dark rum floater.

Spooky Rum Punch
(makes one)

2 oz. light or gold rum
1 lime wedge
2 tbsp. black sanding sugar
.5 tbsp. fresh lime juice
2 – 3 tbsp. simple syrup to taste
1/4 c. pomegranate juice

Black string licorice to make spider
1 oz. dark rum for a floater

Pour the black sanding sugar on a flat plate. Rub the lime wedge on the rim of a cocktail glass, then dip in the black sugar to coat. In a cocktail shaker, add ice, light rum, lime juice, simple syrup and pomegranate juice. Shake about 30 seconds until chilled, then pour into the sugar rimmed glass over ice.

Leave room at the top. Gently pour the dark rum on the top so that it floats. Garnish with a licorice or plastic spider. Mmmm…spooky AND  good!

Cranberry Mojitos

As the holidays approach, we started thinking about cranberry rum drinks and how mint and cranberry might make a refreshing and festive combination. There were several recipes floating around for Cranberry Mojitos and as we experimented with them, we came up with one that we really loved. So, gather your cranberries and rum, mix yourself a refreshing holiday concoction and enjoy a taste of the holidays!

Cranberry Mojitos
(makes one)

10 mint leaves
1 tbsp. brown sugar
1/8 c. dried sweetened cranberries
2 tsp. lime juice
2 oz. light rum
1 c. cranberry juice (we used  cranberry juice cocktail)

Muddle mint, brown sugar, dried sweetened cranberries and lime juice. Add light rum and cranberry juice, stir gently. Pour into a tall glass over ice. Garnish with lime or cranberries if you wish.

We liked having the dried cranberries in the drink, but if you’d prefer not to – strain the drink as you pour it over ice.
