Frozen Mango Daiquiri

Mango and rum just naturally seem to compliment each other (see Mango Mojito, Mango Colada, Spicy Mango Daiquiri, Rum and Mango Salsa, Mango Hurricane, Papaya Mango Rum Float). While perusing the shelves of the local liquor store, we found a mango fruit puree drink mix and thought we’d give it a try in a frozen daiquiri. So easy, cold and delicious! Definitely a go to drink when you need something cold and mangoey!

Frozen Mango Daiquiri

Ingredients

Instructions

  • Pour all ingredients into a blender and blend until smooth. Pour into a glass.
  • Add 1/2 oz. dark rum as a floater, if desired.

Santa Sauce


Sometimes milk and cookies just don’t cut it. Here’s a recipe for a toasty, aromatic beverage that will warm you all the way down to your Christmas socks. I hear that even Santa is asking for a cup of this in lieu of milk. He says you can still serve the cookies though… You might want to double the batch, in case you want to join Santa in a glass or two!

Santa Sauce

Ingredients

Instructions

  • Add cranberry juice and apple cider to a saucepan and warm.
  • Add cloves, bay leaf, cinnamon sticks, cardamom, coriander, star anise, ginger and orange slices.
  • Cover and simmer on low up to 45 minutes.
  • Just before serving, add the rum and stir until just warm.
  • Strain into mugs and serve while warm.

Bananawhacker

If you’ve followed us for a while, you probably know of our affinity for Bushwackers. After all, how can you not be enamored with a combination of chocolate, rum, Bailey’s, Amaretto, (and a few other delicious ingredients)?

During a visit to Foxy’s on Jost Van Dyke several years ago, we noticed a Bananawhacker on the menu. We asked if it was similar to a Bushwacker and our server said, “Just try it. You’ll like it…”. We tried it and we definitely liked it. At least, as far as we remember. Equally as potent with an added banana component, these are da bomb.

Missing the islands, we’ve been going through photos of our travels recently and came across a photo of that visit to Foxy’s in 2015 when we started with a Chicken Roti (Foxy’s makes a good one!) and a Bananawhacker.

Realizing we had yet to post a Bananawhacker recipe, we found that Foxy’s is not the only location that features Bananawhackers. Pensacola, Florida, another place to score an amazing Bushwacker, also features Bananawhackers, or Bananawackers, depending on the location. The recipes all appear to be slightly different, but I’m sure you can’t go wrong with any of them. The recipe below is the closest we remember to Foxy’s Bananawhacker, so enjoy, but be careful – they are strong but so delicious!

Bananawhacker

  • 1 medium Banana (ripe)
  • 2 oz Gold or Aged Rum (we used Cruzan Aged Dark Rum)
  • 1/2 oz Kahlua
  • 1/2 oz Bailey's
  • 1/2 oz Amaretto
  • 1/2 oz Frangelico
  • up to 1 c Ice
  • Banana Slices
  • Freshly Grated Nutmeg

Rum Old-Fashioned

An Old-Fashioned is a classic drink that has been popular since the mid-1800’s. The typical Old-Fashioned is made with bourbon, but in this version, we tried Marque Reserve Rum, which is aged in bourbon barrels. Marque is made without any added sugars and so played nicely with a single brown sugar cube and the bitters. Enjoy!

  • Add the sugar cube and the bitters to glass and muddle.
  • Add ice and the rum and stir.
  • Squeeze a bit of orange peel into the mix.
  • Strain into a martini glass without ice and garnish with maraschino cherries.

Rum Berry Frosé

Currently, the Frose’ (Frozen Rosé) seems to be all the rage. To be honest, we weren’t sure why (partially frozen wine?), but we thought we’d give it a try and ended up enjoying the “fruit” of our labor! The color in this Rum Berry Frosé is perfect for a special Valentine’s Dinner and cold, slushy wine would taste pretty good on a hot summer day! It’s not as sweet as a Strawberry Daiquiri although you can sweeten it to taste with the simple sugar. Use a Rosé that you enjoy and that has a good color for best results. Enjoy!

Rum Berry Frosé

Great for Valentine's Day or warm summer days, this variation of a Frosé is delicious and looks great!
Servings: 4

Ingredients

  • 1 750 ml Bottle of Rosé
  • 1 c. Frozen Strawberries
  • 1/4 c. Strawberry Rum (a good white or silver rum could be used in place of the Strawberry Rum)
  • 1/4 c. Simple Syrup (add a little at a time to taste)
  • 1-2 Fresh Strawberries (for garnish)

Instructions

  • Combine all ingredients in a blender and blend 'til smooth.
  • Place mixture in the freezer for several hours until it's slushy in consistency.
  • Spoon into champagne glasses and garnish with a fresh strawberry slice.

Bushwacker Pudding Shots

You can’t beat the taste of a frosty Bushwacker, especially from the top of Paradise Point in St. Thomas, or on beautiful White Bay, Jost Van Dyke at Ivan’s Stress Free Bar, but this little, easy to make delight sure comes close. They may be small, but they still have a pretty high alcohol content, so enjoy your pudding responsibly!

Bushwacker Pudding Shots

Deliciously potent, please enjoy responsibly!

Ingredients

Instructions

  • Mix pudding and milk in a bowl with an electric mixer until smooth.
  • Beat in liquor.
  • Gently fold in Cool Whip.
  • Spoon into individual shot cups with lids (such as these: Plastic Jello Shot Cups with Lids) and keep in the freezer until ready to use.
  • Garnish with a squirt of whipped cream, a drizzle of chocolate syrup and a sprinkle of freshly grated nutmeg before serving.

When we started the company Rum Therapy in 2010, we knew little more about rum than it was an ingredient in some of our favorite island cocktails; piña coladas, rum punch and painkillers, oh and bushwackers – can’t forget bushwackers… And that rum appeared in the lyrics of many Kenny Chesney and Jimmy Buffett songs. And that wherever you go in the islands, there’s rum.
That’s it.

Since then, we’ve learned a lot more. I mean, when you start with virtually no knowledge of a subject, you’ve got a ways to go. We’re not experts by any means, like our friend Dave Russell of Rum Gallery, but we’ve learned more about how rum is distilled and different types of rum and what rums are good for sipping or mixing in cocktails and although it’s not our goal to become rum experts, we’re certainly up for the challenge of learning more about this spirit with a long and storied history.
