Dang! It’s hot!! We were looking through our list of rum recipes to find the coldest one possible for this weekend by the pool and realized that there were a few that we’ve posted since our post “Frozen Rum Concoctions“. So, we thought we’d compile a second list of our coldest drink recipes so you have more frosty choices! Warning – each one of these is capable of bringing on a brain freeze!

Bushwacker Pudding Shots

You can’t beat the taste of a frosty Bushwacker, especially from the top of Paradise Point in St. Thomas, or on beautiful White Bay, Jost Van Dyke at Ivan’s Stress Free Bar, but this little, easy to make delight sure comes close. They may be small, but they still have a pretty high alcohol content, so enjoy your pudding responsibly!

Bushwacker Pudding Shots

Deliciously potent, please enjoy responsibly!
Course: Drinks
Servings: 12

Ingredients

Instructions

  • Mix pudding and milk in a bowl with an electric mixer until smooth.
  • Beat in liquor.
  • Gently fold in Cool Whip.
  • Spoon into individual shot cups with lids (such as these: Plastic Jello Shot Cups with Lids) and keep in the freezer until ready to use.
  • Garnish with a squirt of whipped cream, a drizzle of chocolate syrup and a sprinkle of freshly grated nutmeg before serving.

Frozen Mason Jar Daiquiris

We recently ran across a post from The Yummy Life that showed a recipe, an easy one at that, for flavored frozen fruity daiquiris. Thinking it would be perfect for an upcoming backyard get-together, we set out to mix up a batch.

Each daiquiri contains a LOT of frozen fruit (guess you could say it’s healthy!) and the taste is simply scrumptious. The best part is, you can mix up a whole bunch of them ahead of time, pour them into 16 oz. mason jars and freeze them until you need them – just leave a little room at the top as they expanded as they freeze! The alcohol keeps them from freezing completely, so just remove them from the freezer about 10 minutes before serving, stir slightly and add a garnish!

Make a batch without the rum for the little ones and designated drivers!

Frozen Mason Jar Daquiris

Each daiquiri contains a LOT of frozen fruit (guess you could say it’s healthy!) and the taste is simply scrumptious.

Servings: 4

Ingredients

  • 3-6 oz. Frozen Lemonade Concentrate (we used about 4 oz. because we like them a little less tart)
  • 6 oz. Light Rum
  • 4 c. Frozen Fruit (strawberry, blueberry, mango)
  • 2 c. Ice
  • Sugar (Sweetener is optional and to taste. We didn't need any when we reduced the frozen concentrate)
  • Fresh Fruit (For Garnish)

Instructions

  • Blend frozen lemonade concentrate, rum, and frozen fruit (and sweetener if needed ) in a blender until smooth.
  • Add ice and blend again until thick and frosty.
  • Pour into a mason jar, garnish and serve, or freeze up to one month in the freezer.

Notes

If you are making these ahead of time, you can pour them into 16 oz. mason jars and freeze them until you need them – just leave a little room at the top as they will expand as they freeze!

BONUS: You can also make these with no alcohol for little ones and designated drivers!!

Frozen Pineapple Daiquiri

One of the tastiest ingredients used in tropical drinks in my opinion, is pineapple – fresh pineapple if possible! This frosty drink calls for 1 and 1/2 cups of pineapple per drink and for the best taste possible, we used a fresh pineapple cut into chunks. At least half of the pineapple used should be frozen for the creamiest effect.

This drink is considered a daiquiri, which traditionally are not overly sweet and just a bit tart due to the addition of  lime juice. If you like a sweet drink, cut back on the amount of lime juice and bump up the amount of simple syrup added. And if you like your drink even tarter, add more lime to taste!

Frozen Pineapple Daiquiri

Ingredients

  • 1 & 1/2 cup pineapple chunks (at least half should be frozen)
  • 2 ounces white rum
  • 2 tbsp simple syrup
  • 1 tsp fresh lime juice
  • 1 to 1 & 1/2 cups ice
  • 2 chunks pineapple and cherry (for garnish)

Instructions

  • In a blender, blend the frozen and fresh pineapple, rum, simple syrup and lime juice.

  • Add ice and blend until smooth and creamy.

  • Pour into a hurricane glass and garnish with pineapple chunks and a cherry.

Watermelon Daiquiri

Summer is in full swing and that means watermelon season! If you’re a fan of watermelon, you’ll probably love the taste of this cool rum drink with a touch of sweetness and a little added tartness. Add a little more sugar for a sweeter drink or a little more lime juice to tarten it up! Enjoy the taste of summer!

Mango Colada

Mango Colada

Servings: 1

Ingredients

  • 1/2 c Frozen Mango Chunks (fresh mango can also be used but you may have to increase the amount of crushed ice)
  • 1/2 c Pineapple Juice
  • 1 tbsp Fresh Lime Juice
  • 1-1/2 oz Cream of Coconut
  • 1-1/2 oz White Rum
  • 1 c Crushed ice
  • Pineapple Slice and Maraschino Cherry for Garnish

Instructions

  • Add all ingredients (except the pineapple slice and maraschino cherry) to a blender and blend until smooth and creamy.
  • Pour into a hurricane style glass and garnish with the pineapple slice and maraschino cherry.

Backyard Tea

Unfortunately we’re not on our favorite island swaying in a hammock this weekend, but we’re still looking forward to relaxing and enjoying a little Rum Therapy in our own backyard. Poppin’ Strawberry Colada

We wanted to post this one sooner, but finding pop rocks turned out to be quite the feat! We thought this might be a good recipe for the holiday weekend – festive, cold and rummy – and with a little sizzle and pop! This can easily be made without rum for the “yung uns” and designated drivers! Be safe and enjoy!

Poppin' Strawberry Colada

Servings: 2

Ingredients

Instructions

  • Blend rum, pineapple juice, strawberries and coconut cream until smooth.
  • Add ice and blend until creamy.
  • Dip the rim of two small glasses in a small bowl of pineapple juice, then dip in pop rocks (put the pop rocks on a plate for easier access). The rocks will begin to pop as soon as they get wet, but there is still some residual popping to enjoy as you sip! 
  • Add a garnish of blueberries for color. Cheers!
