Bushwacker Pudding Shots

You can’t beat the taste of a frosty Bushwacker, especially from the top of Paradise Point in St. Thomas, or on beautiful White Bay, Jost Van Dyke at Ivan’s Stress Free Bar, but this little, easy to make delight sure comes close. They may be small, but they still have a pretty high alcohol content, so enjoy your pudding responsibly!

Bushwacker Pudding Shots

(makes about 12 – 2 oz. servings)

1 small pkg. of Instant Chocolate Pudding
3/4 c. milk
1/4 c. coconut rum
1/4 c. Bailey’s Irish Cream
1/4 c. Kahlua
8 oz. Extra Creamy Cool Whip
canned whipped cream

chocolate syrup
freshly grated nutmeg

Mix pudding and milk in a bowl with an electric mixer until smooth. Beat in liquor. Gently fold in Cool Whip. Spoon into individual shot cups with lids (such as these: Plastic Jello Shot Cups with Lids, 2-Ounce) and keep in the freezer until ready to use. Garnish with a squirt of whipped cream, a drizzle of chocolate syrup and a sprinkle of freshly grated nutmeg before serving.

Frozen Mason Jar Daiquiris

We recently ran across a post from The Yummy Life that showed a recipe, an easy one at that, for flavored frozen fruity daiquiris. Thinking it would be perfect for an upcoming backyard get-together, we set out to mix up a batch.

Each daiquiri contains a LOT of frozen fruit (guess you could say it’s healthy!) and the taste is simply scrumptious. The best part is, you can mix up a whole bunch of them ahead of time, pour them into 16 oz. mason jars and freeze them until you need them – just leave a little room at the top as they expaned as they freeze! The alcohol keeps them from freezing completely, so just remove them from the freezer about 10 minutes before serving, stir slightly and add a garnish!

Make a batch without the rum for the little ones and designated drivers!

Frozen Mason Jar Daiquiris
adapted from The Yummy Life
(makes about 4 – 8 oz. servings – each batch fills two 16 oz. mason jars)

3 – 6 oz. frozen lemonade concentrate
(we used about 4 oz. because we like them a little more sweet – less tart)


6 oz. light rum

4 c. frozen fruit
(we made one full batch of each: strawberry, blueberry, mango)


2 c. ice


sweetener
(optional and to taste) agave, raw sugar, etc. We didn’t need sweetener when we decreased the amount of frozen lemonade concentrate

fresh fruit for garnish

Blend frozen lemonade concentrate, rum, and frozen fruit (and sweetener if needed ) in a blender until smooth. Add ice and blend again until thick and frosty. Pour into a mason jar, garnish and serve, or freeze up to one month in the freezer.

Frozen Pineapple Daiquiri

One of the tastiest ingredients used in tropical drinks, in my opinion, is pineapple – fresh pineapple if possible! This frosty drink calls for 1.5 cups of pineapple per drink and for the best taste possible, we used a fresh pineapple cut into chunks. At least half of the pineapple used should be frozen for the creamiest effect.

This drink is considered a daiquiri, which traditionally are not overly sweet and just a bit tart due to the addition of  lime juice. If you like a sweet drink, cut back on the amount of lime juice and bump up the amount of simple syrup added. And if you like your drink even tarter, add more lime to taste!

Frozen Pineapple Daiquiri

Frozen Pineapple Daiquiri
(makes one)

1.5 c. chunk pineapple (at least half should be frozen)
2 oz. white rum
2 tbsp. simple syrup
1 tsp. fresh lime juice
1 – 1.5 c. ice
pineapple chunks and cherry for garnish

Blend the frozen and fresh pineapple, rum, simple syrup and lime juice. Add ice and blend until smooth and creamy. Garnish with pineapple chunks and a cherry.

Watermelon Daiquiri

 Summer is in full swing and that means watermelon season! If you’re a fan of watermelon, you’ll probably love the taste of this cool rum drink with a touch of sweetness and a little added tartness. Add a little more sugar for a sweeter drink or a little more lime juice to tarten it up! Enjoy the taste of summer!

(makes one)

1 c. cubed watermelon
3/4 c. ice
1-1/2 oz. white rum
1 tsp. sugar
1/2 tsp. lime juice
1/8 c. coconut milk

Blend all ingredients until smooth, pour into sugar rimmed glass. Garnish with a wedge of watermelon.

Mango Colada

If you like the taste of mango, you’re gonna love this cold and creamy blended rum drink. I can tell that as the weather gets warmer and summertime sets in, this will be a refreshing favorite here! Enjoy!

(makes one)

1/2 c. frozen mango chunks
(fresh mango can also be used – you may need to add more ice when blending)
1/2 c. pineapple juice
1 tbsp. fresh lime juice
1- 1/2 oz. cream of coconut
1- 1/2 oz. white rum
1 c. crushed ice
Pineapple slice and maraschino cherry for garnish

Add all ingredients (except the pineapple slice and maraschino cherry) to a blender and blend until smooth and creamy. Garnish with the pineapple slice and maraschino cherry.

Backyard Tea

Unfortunately we’re not on our favorite island swaying in a hammock this weekend, but we’re still looking forward to relaxing and enjoying a little Rum Therapy in our own backyard. We ran across this recipe from Sailor Jerry called “Backyard Tea” that sounds just like what we’re looking for – easy, cold, refreshing and spiked with some tasty Sailor Jerry Spiced Rum.

2 parts Sailor Jerry Rum
1 part ice tea
2 parts lemonade

Add ingredients to an ice filled glass and garnish with slices of lemon.

Poppin’ Strawberry Colada

We wanted to post this one sooner, but finding pop rocks turned out to be quite the feat! We thought this might be a good recipe for the holiday weekend – festive, cold and rummy – and with a little sizzle and pop! This can easily be made without rum for the “yung uns” and designated drivers! Be safe and enjoy!

Poppin’ Strawberry Colada

Poppin’ Strawberry Colada
(makes two)

3 oz. gold rum
4 oz. pineapple juice
1 c. frozen strawberries
1 oz. coconut cream
1 c. ice
2 envelopes Strawberry Pop Rocks
blueberries for garnish

Blend rum, pineapple juice, strawberries and coconut cream until smooth. Add ice and blend until creamy. Dip the rim of two small glasses in a small bowl of pineapple juice, then dip in pop rocks (put the pop rocks on a plate for easier access). The rocks will begin to pop as soon as they get wet, but there is still some residual popping to enjoy as you sip! Add a garnish of blueberries for color. Cheers!

Pineapple & Rum Sorbet

Pineapple Rum Sorbet – perfect treat for the warm and lazy days of summer! We used an ice cream maker to mix our batch up, but if you don’t have one, just put the mix in a freezer safe container, freeze overnight, then re-mix in the blender and freeze a little longer. Easy and delicious!

Pineapple Rum Sorbet

Pineapple & Rum Sorbet
(makes 4-6 servings)

1/4 c. gold rum
1 c. water
1 c. sugar
1 fresh, ripe pineapple

Peel and core the pineapple. Cut into chunks and place in a blender. Pour the rum in the blender. Heat water and sugar on the stove until the sugar melts. Cool, then add to the blender. Blend all ingredients just slightly – it’s ok to have small chunks of pineapple (in fact, we prefer it!) Using an ice cream maker (or the method above) freeze the mix. Garnish with pineapple and enjoy.
