Dominican Coco Loco

Since we will be visiting the Dominican Republic very soon, we started looking for rum drinks and cocktails from the area to try while we’re there. One that we’ve run across a few times is the Coco Loco. Although there are several versions floating around the internet, this one was identified as a Dominican Coco Loco. We’ll do a little research while down there and let you know if this is close. Even if we nailed the recipe though, I have a sneaky suspicion it may just taste even better served in a coconut on a beautiful beach in the Dominican Republic sunshine…

Dominican Coco Loco

Ingredients

Instructions

  • Pour the rum, Amaretto, cream of coconut, grenadine, milk and ice into a blender and blend until smooth.
  • Add the pineapple juice and continue to blend until smooth. 
  • Pour into a glass, then garnish with a cherry or a slice of pineapple.

Lime In De Coconut

You put de lime in de coconut and drink ’em both up…

A smooth, blended, frozen concoction with the wonderful taste of lime and coconut. Light and tasty. Serve it in a coconut with an umbrella for a real tropical look.

Lime in de Coconut

A smooth, blended, frozen concoction with the wonderful taste of lime and coconut. Light and tasty. Serve it in a coconut for a real tropical look!

  • Pour rums and lime wedges in a blender and blend until the lime is broken into very small specks.
  • Add lime juice and Coco Lopez and ice and continue to blend until smooth. 
  • Add more ice until it becomes quite slushy.
  • Pour into a coconut glass (or real coconut half) and garnish with a lime slice. (biodegradable straw and umbrella optional!)

The Cruzan Confusion

While spending a week in St Croix, we were introduced to a rum drink called the Cruzan Confusion. Our wonderful bartender, Dave, at the Divi Carina Resort in St Croix gave us his secret recipe for this wonderful and oh-so-powerful concoction, but we thought we’d check the internet to see if there was another recipe posted. We found a number of sites with the following Cruzan Confusion recipe, and I’ve included Dave’s, for comparison at the end. Let the confusion commence!!

Cruzan Confusion

  • Stir together in a chilled cocktail glass and serve.

Dave's Cruzan Confusion

Servings: 1

Ingredients

  • 1/2 oz Your choice of mix of Cruzan Rums up to about 4 oz. (current Cruzan flavors: banana, black cherry, citrus, strawberry, coconut, guava, mango, pineapple, raspberry, and vanilla)
  • 2 oz Pineapple Juice
  • Splash Grenadine
  • Cherry and Lime for Garnish
  • 1/4 Cruzan Black Strap Rum

Instructions

  • Blend the flavored rum, pineapple juice and grenadine together and pour over ice.
  • Fill a biodegradable straw with Cruzan Black Strap, add garnish and enjoy.
