Miami Vice

Oh, the Miami Vice. Such a sensual treat. The smell of coconut and strawberry mingling with rum. The taste of the tropics. Just looking at one brings me back to vacations past; lounging in a beach chair in paradise, and a bartender keeping us well stocked with a never ending supply of these tropical delights. I came across an easy recipe for a Miami vice recently and good vacation memories came flooding back and I thought – this should be called a “Tropical Beach Party In Your Mouth”.

We’ve made these before by mixing a batch of pina coladas and a batch of strawberry daiquiris from scratch and honestly, the taste is supreme, but it’s a lot of work. Especially because they go down way too easy, making the host jump out of their beach or pool chair to mix up another batch for everyone. This recipe is simple and it’d be quite easy to double it from the beginning, giving you extra time to relax and enjoy some Rum Therapy!

Miami Vice

Tropical Beach Party In Your Mouth

Course: Drinks
Servings: 3

Ingredients

  • 5 oz. 151 "Overproof" Rum
  • 1 can Pina Colada Mix
  • 1 can Frozen Daiquiri Mix
  • Fresh Strawberries

Instructions

  • Combine pina colada mix with 2.5 oz of rum and ice – add enough ice to make a thick mix. Set aside.
  • Combine daiquiri mix with 2.5 oz of rum and ice.
  • Again, add enough ice to make it nice and thick.
  • Pour pina colada and daiquiri mixture into a tall glass at the same time.
  • If that gets a bit too messy, alternate pours.
  • Garnish with strawberries.

Pineapple Daiquiri

If you’ve ever been to Hawaii, you’ve probably sampled some fresh Hawaiian pineapple…mmm….When we started pulling together ingredients for a Pineapple Daiquiri, we thought we would try a Hawaiian rum called Kōloa. Kōloa Rum has a dark rum called Kaua’i Dark Rum which we felt would work perfectly with the taste of fresh pineapple and it did.

Pineapple Daiquiri

Servings: 4

Ingredients

  • 1/2 c Kōloa Kaua’i Dark Rum
  • 1/2 large, fresh Pineapple
  • 6 oz Pineapple Juice
  • 6 oz Frozen Limeade Concentrate
  • 1 c Crushed Ice

Instructions

  •  Remove pineapple from shell; core and cut fruit into chunks.
  • Mix pineapple chunks, pineapple juice, rum and limeade in blender.
  • Add ice and blend until frothy.
  • Pour into glasses and garnish with a fresh slice of pineapple.

Frozen Rum Runners

Yum. As summer approaches my mind drifts to frozen concoctions and enjoying the warm sunshine with a frosty glass in hand. One of my favorite frozen concoctions happens to be a Rum Runner. Kind of like an icee with a really good kick!

Everyone seems to have a little different recipe for Rum Runners and I’ve only sampled one that I didn’t care for (I think it may have been a really cheap rum). We’ve sampled them frozen and on the rocks. Some have a reddish hue and some (like the picture below) are more orange in color. Regardless, sipping one of these may make your mind take a short vacation to a place with a hammock swaying in a tropical breeze on the coast of somewhere beautiful….

Frozen Rum Runner

Kind of like an icee with a really good kick!
Course: Drinks
Servings: 1

Ingredients

  • 1 oz. Gold Rum
  • 1/4 oz. Blackberry Liqueur
  • 1/4 oz. Creme De Banana Liqueur
  • 2 oz. Orange Juice
  • 1/2 oz. Grenadine
  • 8 oz. Crushed Ice
  • 1/2 oz. Dark or 151-Proof Rum (the floater)

Instructions

  • Add gold rum, blackberry liqueur, creme de banana liqueur, orange juice, grenadine and crushed ice in a blender.
  •  Blend until slushy and pour into glass.
  • Float with 1/2 oz. dark or 151 proof rum.
