Rum & Mango Salsa

A little sweet, a little spicy and a whole lot of yummy! It’s mangoey freshness with just a taste of rum! Easy to make, you can enjoy this with some tortilla chips or with chicken or fish.

Rum & Mango Salsa

Servings: 3 cups

Ingredients

  • 2 ripe Mangoes (cubed)
  • 1 small Red Bell Pepper (chopped)
  • 1/3 c Red Onion (chopped)
  • 1 Jalapeño (seeded and minced)
  • 1 tbsp Cilantro (chopped)
  • 1 tbsp Aged Rum (Be sure to use an aged rum that you enjoy the taste of – spiced rum not recommended)
  • 1/2 Lime (juiced)

Instructions

  • Add mangoes and rum to a medium bowl. Stir and let sit for 10 minutes in the refrigerator.
  • Stir in the peppers, onion, cilantro and jalapeño and mix well.
  • Sprinkle with the lime juice and mix.
  • Serve with tortilla chips or with chicken or fish.
