Frozen Mango Daiquiri

Mango and rum just naturally seem to compliment each other (see Mango Mojito, Mango Colada, Spicy Mango Daiquiri, Rum and Mango Salsa, Mango Hurricane, Papaya Mango Rum Float). While perusing the shelves of the local liquor store, we found a mango fruit puree drink mix and thought we’d give it a try in a frozen daiquiri. So easy, cold and delicious! Definitely a go to drink when you need something cold and mangoey!

Frozen Mango Daiquiri

Servings: 1

Ingredients

Instructions

  • Pour all ingredients into a blender and blend until smooth. Pour into a glass.
  • Add 1/2 oz. dark rum as a floater, if desired.

Rum & Mango Salsa

Are you a fan of Mango drinks with rum such as this Mango Mojito, Mango Hurricane, Mango Colada or Papaya Mango Rum Float? If so, you’re gonna love this Rum & Mango Salsa! A little sweet, a little spicy and a whole lot of yummy! It’s mangoey freshness with just a taste of rum! Easy to make, you can enjoy this with some tortilla chips or with chicken or fish.

Rum & Mango Salsa

Servings: 3 cups

Ingredients

  • 2 ripe Mangoes (cubed)
  • 1 small Red Bell Pepper (chopped)
  • 1/3 c Red Onion (chopped)
  • 1 Jalapeño (seeded and minced)
  • 1 tbsp Cilantro (chopped)
  • 1 tbsp Aged Rum (Be sure to use an aged rum that you enjoy the taste of – spiced rum not recommended)
  • 1/2 Lime (juiced)

Instructions

  • Add mangoes and rum to a medium bowl. Stir and let sit for 10 minutes in the refrigerator.
  • Stir in the peppers, onion, cilantro and jalapeño and mix well.
  • Sprinkle with the lime juice and mix.
  • Serve with tortilla chips or with chicken or fish.

Frozen Mason Jar Daiquiris

We recently ran across a post from The Yummy Life that showed a recipe, an easy one at that, for flavored frozen fruity daiquiris. Thinking it would be perfect for an upcoming backyard get-together, we set out to mix up a batch.

Each daiquiri contains a LOT of frozen fruit (guess you could say it’s healthy!) and the taste is simply scrumptious. The best part is, you can mix up a whole bunch of them ahead of time, pour them into 16 oz. mason jars and freeze them until you need them – just leave a little room at the top as they expanded as they freeze! The alcohol keeps them from freezing completely, so just remove them from the freezer about 10 minutes before serving, stir slightly and add a garnish!

Make a batch without the rum for the little ones and designated drivers!

Frozen Mason Jar Daquiris

Ingredients

  • 3-6 oz. Frozen Lemonade Concentrate (we used about 4 oz. because we like them a little less tart)
  • 6 oz. Light Rum
  • 4 c. Frozen Fruit (strawberry, blueberry, mango)
  • 2 c. Ice
  • Sugar (Sweetener is optional and to taste. We didn't need any when we reduced the frozen concentrate)
  • Fresh Fruit (For Garnish)

Instructions

  • Blend frozen lemonade concentrate, rum, and frozen fruit (and sweetener if needed ) in a blender until smooth.
  • Add ice and blend again until thick and frosty.
  • Pour into a mason jar, garnish and serve, or freeze up to one month in the freezer.

Notes

If you are making these ahead of time, you can pour them into 16 oz. mason jars and freeze them until you need them – just leave a little room at the top as they will expand as they freeze!

BONUS: You can also make these with no alcohol for little ones and designated drivers!!

Papaya-Mango Rum Float

Papaya, mango, rum and ice cream – what’s not to like about this summer dessert drink? This tasty concoction reminds me of the great fresh fruit (and rum!) that we enjoyed in Jamaica. We just barely blended the papaya, mango and rum so that there were still small chunks of papaya – but you can blend it longer if you want a creamier mix.

Papaya-Mango Rum Float

Papaya, mango, rum and ice cream – what’s not to like about this summer dessert drink?

Servings: 1

Ingredients

  • 1/2 c. Fresh Papaya
  • 1/2 c. Mango Juice
  • 2 oz. White Rum
  • 3 scoops Vanilla Ice Cream
  • Sliced Papaya and Lime

Instructions

  • Prepare the papaya by peeling, removing seeds and cutting into cubes.
  • Blend papaya, mango juice and rum in a blender until desired consistency.
  • Place 3 scoops of vanilla ice cream in a tall glass, then pour the papaya, mango and rum mixture over the top. Stir slightly before drinking. Cheers!
