Coffee Rum Banana Bread made with Koloa Coffee Rum

We follow Kōloa Rum Company in Kauai on Facebook and recently noticed a recipe for Banana Bread using Kōloa’s delicious Kauaʻi Coffee Rum. Unfortunately, we’d recently finished our bottle of Coffee Rum, so quickly ordered another bottle from Quality Liquor Store (they usually carry it at our Total Wine Stores, but lately they’ve been out).

Upon arrival, we set out to test the recipe. Bananas, Coffee Rum and chocolate – gotta be good, right? Well, it was. But not a fast recipe to put together. Give yourself about 30 minutes to prepare and another 55-60 minutes to bake. The result? Very good and moist, but maybe more cake-like than banana bread-like. Still worth the time, especially if you are sipping coffee rum while baking!

Coffee Rum Banana Bread

A delicious recipe from Kōloa Rum Company using Kōloa Coffee Rum!

Banana Mix-In

Banana Bread Batter

Instructions

  • Preheat oven to 350 F and spray standard 9 x 5 inch loaf pan with cooking oil.
  • Make banana mix-in by peeling and slicing bananas into 1 inch disks in a bowl with brown sugar and cinnamon. Toss to coat.
  • Place butter in a large skillet and turn heat to medium high. Once the butter has melted, add the banana with sugar and cinnamon. Stir with a wooden spoon, breaking up the bananas as they cook (2-5 minutes depending on how ripe they are).
  • Add Koloa Coffee Rum and vanilla, and continue to cook until the bananas have mostly fallen apart.
  • Make bread batter by placing the flours, salt, baking soda and baking powder in a large bowl. Stir vigorously with a balloon whisk until uniform in color.
  • Place sugar and melted butter in the bowl of a stand mixer fitted with the paddle attachment. Beat until the sugar starts to dissolve, about 30 seconds.
  • Add half the dry ingredients and beat until incorporated. Add the warm banana mix-in from the skillet and beat until incorporated. Repeat with the remaining dry ingredients and then end with the Greek yogurt.
  • Scoop out 1/3 of the batter into a bowl. Measure out the Koloa Coffee Rum and add the cocoa powder to it. Stir together to form a thickened past. Scrape into the smaller batter and stir together.
  • Spoon the batter into the bread loaf pan, alternating some of the regular banana bread batter with some of the Koloa Coffee Rum batter on top of each other. Once you've finished, take a butter knife and make one of two swirls in the pan to help marble the butter. Do not over-stir.
  • Bake in the oven for 55-60 minutes, or until a toothpick inserted in the middle comes out clean.
  • Cool in the pan for 15 minutes before turning out the warm loaf onto a wire rack to cool completely.

The Classic Daiquiri

The Classic Daiquiri is one of the easiest cocktails to make (just 3 ingredients), but the result is light and delicious. For Friday Happy Hour this week we thought we’d make a Classic Daiquiri using a bottle of Banks 5 Island Rum that we had just received, and the resulting cocktail was very nice. A very nice balance of sweet and tart.

The Classic Daiquiri

Exactly what a daiquiri should taste like!
Servings: 1

Ingredients

  • 2 oz Light or Silver Rum
  • 1 oz plus 1 tsp Lime Juice (fresh is always best!)
  • 1/2 oz Simple Syrup

Instructions

  • Gently shake all ingredients over ice. Strain into a glass and garnish with lime.
  • The traditional Daiquiri is slightly tart, so if you like a sweeter drink, increase the amount of simple syrup or decrease the amount of lime by 1 tsp.

Rum & Mango Salsa

Servings: 3 cups

Ingredients

  • 2 ripe Mangoes (cubed)
  • 1 small Red Bell Pepper (chopped)
  • 1/3 c Red Onion (chopped)
  • 1 Jalapeño (seeded and minced)
  • 1 tbsp Cilantro (chopped)
  • 1 tbsp Aged Rum (Be sure to use an aged rum that you enjoy the taste of – spiced rum not recommended)
  • 1/2 Lime (juiced)

Instructions

  • Add mangoes and rum to a medium bowl. Stir and let sit for 10 minutes in the refrigerator.
  • Stir in the peppers, onion, cilantro and jalapeño and mix well.
  • Sprinkle with the lime juice and mix.
  • Serve with tortilla chips or with chicken or fish.

Island Girl

We’ve been really missing the islands and have had a hankering for a good coconuty rum drink lately. We just happened to have a full bottle of Blue Chair Bay Coconut Rum on the rum shelf and thought we’d look through the recipes on their website. They all looked good, but there was one that really sounded delicious – the Island Girl. We had all of the ingredients on hand so we whipped one up. It was super easy and tasted similar to a Painkiller – but a bit more refreshing. SOLD! This will be one we make a lot during the upcoming hot summer months!

  • Pour ingredients into two glasses with ice. We used something similar to these Pineapple Glasses. For a party or get together, you can increase the ingredient amounts to make a large batch and use this Pineapple Dispenser!

Six-Feet Sangria

A delicious Sangria with rum which may make social distancing a little…more tolerable? Six-Feet Sangria – it’s got a dose of Vitamin C in the fruit and sits pretty on a coaster of a square of toilet paper (no TP was wasted in photographing this drink)! The ingredients make one, but it can easily be doubled or quadrupled. Call your friends, give them the recipe and have a virtual happy hour! Cheers!

Six-Feet Sangria

A delicious fruity Sangria with the addition of a nice light rum. Easy to double or quadruple.
Servings: 1

Ingredients

  • 3/4 c. Red Wine (we used a Pinot Noir)
  • 1 oz. Light, White or Silver Rum (we used Real McCoy 3 Yr. Old Silver Rum)
  • 1/2 c. Fresh Fruit cut into chunks (we used apple, strawberry and raspberry)
  • 1/4 c. Lemon Lime Soda
  • 1/2 oz. Simple Syrup Optional and to taste. If you are using a sweet red wine or do not like your drink too sweet, the simple syrup is not needed.
  • Ice

Instructions

  • Pour the wine into a bowl and add the rum and lemon lime soda
  • Add the fruit to the mixture.
  • Taste the mixture and add simple syrup to taste. This step is optional and depending on the wine and your taste, you may not want to add simple syrup to make it sweeter.
  • Chill the mixture for at least an hour.
  • Pour over ice in a stemless wine glass and enjoy.

Creamy Cojones Cocktail

Oh yum. This recipe for a Creamy Cojones Cocktail contains caramel, apple juice, cream and Rumcojones, original cinnamon rum. It’s a creamy and delicious combination that we created as a cold drink, but could probably also be delectable served warm.

Creamy Cojones Cocktail

Oh yum. This recipe for a Creamy Cojones Cocktail contains caramel, apple juice, cream and Rumcojones – a new cinnamon rum. It's a creamy and delicious combination that we created as a cold drink, but could probably also be delectable served warm.

  • Warm the caramel and pour a small amount on a plate. Dip the rim of the martini glasses in the caramel, then coat with sugar.
  • Drizzle remaining caramel on the inside of the glasses.
  • In a blender, blend together Rumcojones, cream, ice, apple juice, ground cloves and nutmeg until smooth.
  • Pour mixture into the martini glasses and top with a generous dollop of whipped cream. Sprinkle with cinnamon and serve.

Rum Berry Frosé

Currently, the Frose’ (Frozen Rosé) seems to be all the rage. To be honest, we weren’t sure why (partially frozen wine?), but we thought we’d give it a try and ended up enjoying the “fruit” of our labor! The color in this Rum Berry Frosé is perfect for a special Valentine’s Dinner and cold, slushy wine would taste pretty good on a hot summer day! It’s not as sweet as a Strawberry Daiquiri although you can sweeten it to taste with the simple sugar. Use a Rosé that you enjoy and that has a good color for best results. Enjoy!

Rum Berry Frosé

Great for Valentine's Day or warm summer days, this variation of a Frosé is delicious and looks great!
Servings: 4

Ingredients

  • 1 750 ml Bottle of Rosé
  • 1 c. Frozen Strawberries
  • 1/4 c. Strawberry Rum (a good white or silver rum could be used in place of the Strawberry Rum)
  • 1/4 c. Simple Syrup (add a little at a time to taste)
  • 1-2 Fresh Strawberries (for garnish)

Instructions

  • Combine all ingredients in a blender and blend 'til smooth.
  • Place mixture in the freezer for several hours until it's slushy in consistency.
  • Spoon into champagne glasses and garnish with a fresh strawberry slice.

Festive Rum & Cranberry Cocktail

This delicious, slightly tart, slightly sweet, rum & cranberry cocktail could be a great substitute for flutes of wine or champagne for a holiday meal or party. It’s super easy to make and so festive looking! Besides the time needed to freeze the cranberry ice cubes, the drink itself takes just a few moments to put together so you can enjoy the party too!

Just omit the rum for the younger crowd or designated drivers!

Festive Rum & Cranberry Cocktail

Ingredients

  • 3 oz. White rum (we used Bacardi Superior)
  • 1 c. Cranberry Juice Cocktail
  • 1 bag Fresh Cranberries
  • 1 Lime (optional, for garnish)

Instructions

  • Using a mini ice cube tray mold, drop one cranberry in each mold, then fill with water. Freeze until hard.
  • Fill two chilled flutes with cranberry ice cubes, then add the rum and cranberry juice cocktail.
  • Optional – garnish with a lime wheel. Serve immediately.

Autumn Spiced Hard Cider

Hard Apple Cider is an apple juice or apple cider that has been allowed to ferment, creating it’s own alcohol. On average, a hard cider contains from 4-6 percent alcohol, and with the addition of spiced rum, this refreshing cocktail can pack a punch! In addition to the Hard Apple Cider ( we used Angry Orchard Crisp Apple Hard Cider, but there are many other Hard Apple Ciders to choose from) we added pineapple juice, cranberry juice, a sprinkle of cinnamon and ground cloves. The aroma and taste will make a crisp and delicious drink to add to your favorite fall cocktail list!
